If you are working on the block diagram and want to create a control with a default value it is fastest to create a constant first and give it a value, then convert that constant to control (right-click menu). The resulting control will already have that value as default.
The "normal" way of course is to right-click the control on the front panel and choose Data Operations >> Make Current Value Default.
